I am using Pop!_OS 20.10 (64-bit) which is based on Ubuntu. System is an 4.2 GHz i5-1135G7, 24GB Ram, NMVe v4 SSD (Samsung Pro 980 @ 500GB) This system is WAY over powered for just running Linux, but you have to enjoy life once right? System is of course from System 76.
Yes, we definitely plan to release a stable version of Viewer for Mac/Linux with more features as well as Host/Agent for Mac/Linux in the near future. Unfortunately we cannot provide any specific ETA on these releases yet, but we'll do our best to make them available as soon as we can.

Setup host on fresh install of Windows 10 Pro. Add to viewer by IP address. Connect Get Internet-ID for host. Update properties for host in viewer to be Internet-ID connection Disconnect Reconnect Copy text from mac, try and paste on windows 10 (via Command-V or Ctrl-V) -
Windows 10 fails to past and opens Cortana dialog.
